My friends and colleagues who tried my Lao Ban style beancurd had rated 95% similarity tasted to Lao Ban Beancurd! (yes.. thanks to the online recipe ^ ^)
Lao Ban Style Beancurd making in process...
Those are the ingredients that you need:
Preparation:
(best is to prepare and measure all ingredient before you start making the beancurd)
60g Polleney Soybean Powder
$5.90 at NTUC (500g package and you need to measure by your own)
30g Unisoy Instant Organic Soya Milk Power
It comes with 2 type of packaging, a big pack and a pack consist of 15 sachets. I personally felt that to get the 15 sachets per pack will be more conveniently as per sachet is 30g and you can save the trouble to do the measuring.
30g Nestle coffeeMate
13g Red Man Instant Jelly Powder
The easiest place to find this Jelly Powder is at Phoon Huat Stores, 200g at $5.90. Pls take note of this exact item and do not substitute with gelatin, Konnyaku Jelly, agar-agar or other dubiously named powder.
20g Sugar
You may reduce or increase the sugar according to your own preference and taste. My personally advise is to control on sugar level intake. As too much sugar intake is bad for health, complexion, immune system as well as accelerate ageing..hmm.. also many other bad one..
700ml water
As to act like a pro.. Normally i will prepared all ingredients ready and leave them aside.
Okie now let get start!
1. Pour the Polleney Soybean Powder, Unisoy Soya Milk Powder and water into the pot. Place the pot on the stove, use low heat.
Whisk the mixture well, scrape the bottom of the pot and make sure the powder did not struck on the surface. Is normal to see the growing mass of bubbles and not to worry. Gotta make sure that the mixture is fully dissolved before move to the next step.
(DO NOT BOIL THE MIXTURE, if it getting too hot, you will see mixture leaving a brown marks in the pot and you gotta turn off the fire and remove the pot from the stove for a while)
2. Add CoffeeMate and Sugar into the mixture and whisk till everything are dissolved. In this step, you have to keep the mixture as hot as possible without boiling it. You should see or feel the steam emanating from the mixture.
3. Add in the Red Man Instant Jelly Powder and stir quickly (do not whisk). The mixture must be hot and well mixed so that it would not coagulate. When it is well mixed and fully dissolved, turn off the stove.
4. Sieve the mixture.
I am a kaisu type of person, I will sieve in 3 steps in order for the beancurd to have smooth texture.
I will used the fine sieve for 1st round, followed by the coffee bag then lastly the Magic Oil Sieve.
You have to do the sieving fast or else the mixture will cool down and coagulate.
(if your beancud taste powdery, this mean you have failed the sieving step)
5. Finally pour the mixture into the container slowly and you won't have any bubbles.
If you still see bubbles, you can use a metal spoon to tap away the bubbles.
After tapping with metal spoon..
When the Soybean Milk turn cool, keep in fridge for 5hrs and you will have yummy yummy lao ban style beancurd.
It is a very easy step and anytime you can have your own self made beancurd whenever you craving for it.
Happy Lao Ban'ing peeps~~
