Non Bake Oreo Cheese Cupcake



Lot of friends been asking me about the Oreo cheese cupcake that I made previously. I actually got the recipes online. It is a very easy step and non baking require.  



Ingredients (for 6 cupcake cheesecakes)

Crust
  • 57g digestive biscuits 
  • 30g tablespoons melted butter
Filling
  • 155g cream cheese, softened
  • 120ml cup whipping cream, whipped
  • 50g powder sugar (you may reduce the sugar accordding to your preference)
  • 4 Oreo cookies
  • 1 teaspoon lemon juice
  • 1/2 teaspoon pure vanilla extract
Topping
  • 3 Oreo Cookies
Step for the crust

Prepare a cupcake pan with pepper liners.

Put the 4 Oreo in a zip bag and zip up. Then roughly crush them with a rolling pin. And set a side.

Place the digestive crackers in a zip bag and crush them with a rolling pin until fine crumbs. Then add in a mixing bowl and stir in melted butter until well mixed.  Distribute the mixture into the cupcake molds and press down to form a hard crust. Let the crust cool.

Step for the filling

Beat the whipping cream until soft peaks. And set aside.

Prepare a bowl, dd in cream cheese, confectioners’ sugar, vanilla extract, and lemon juice. (Lemon juice acid will thickens the filling and tastes better) After added the lemon juice, the cream cheese will be softened. So stir until well combined. 

Add in whipped cream and whisk until homogeneously mixed. add in crushed Oreo and lightly stir to combine.

Lastly, use an ice cream scoop, fill the individual mould with the batter. Use a spoon press a little and make the top smooth. 

Chill them in the refrigerator overnight.

To serve

Put the remaining Oreo cookies in the zip bag crush with a rolling pin until fine sands, dust on top of the cheesecakes and serve immediately. You may use the A4 paper and cut out the heart shape, place the shape on top of the cupcake and dust the powder sugar to make the shape.
